Smoked Salmon and Arugula with Shaved Vidalia, Dill, and Lemon Honey Dressing

You can't get much more simple than this salad. It takes less than 5 minutes to make and is light, fresh, and healthy. This salad works great as a great first course for company dinners but you can also add cooked quinoa or a thick slice of multigrain bread and have it for a delicious healthy break from your work-from-home day or for an after-workout light meal.

Buy the freshest smoked salmon you can find, and this salad will always make you smile. You can substitute almost any green, but peppery ones such as mizuna or mustard work best. If you only have spinach or lettuce, try adding capers for that extra kick.

Ingredients

1 oz. Smoked Salmon

2 cups arugula

1-2 very thin slices of Vidalia onion (use a mandolin in you have one)

1 tsp fresh dill

2 tbsp lemon juice (1/2 lemon)

1 tbsp olive oil

1 tbsp honey

kosher salt*

Preparation

Whisk the lemon juice, olive oil, honey, and salt in a large bowl until thoroughly blended. Add arugula and Vidalia, reserving some onion for garnish. Top with salmon, garnish with remaining onion and sprinkle with dill.


I use about 1/8 tsp salt per serving, but it can vary depending on your salt type (I use David's, which isn't available everywhere). Start with a pinch per serving (about 1/8 tsp for two servings) and add to taste.
